TIPS TO FOLLOW
Freshness is determined by roast date not harvest date • Beans should always be kept whole until ready for brewing • Ground coffee deteriorates much quicker than whole beans • We recommend either the French Press or Drip • Other methods work great but these two are classic, simple and deliver a great cup of coffee
PICK YOUR BREWING METHOD
A French Press method requires coffee of a coarser grind than does a drip brew, as finer grounds will seep through the press filter and into the coffee. Coffee is brewed by placing the coffee and water together, stirring it and leaving to brew for a few minutes, then depressing the plunger to trap the coffee grounds at the bottom of the beaker.
Because the coffee grounds remain in direct contact with the brewing water and the grounds are filtered from the water via a mesh instead of a paper filter, coffee brewed with the French press captures more of the coffee's flavor and and essential oils, which would become trapped in a traditional drip brew machine's paper filters. French pressed coffee is usually stronger and thicker and has more sediment than drip-brewed coffee.
Use a high quality grinder set to coarse. 1 round tablespoon per 'cup'—about 4 oz. Your water should be boiled before you grind the coffee. This ensures the freshest cup possible.
- POURING WATER
Pour the slowly, saturating all of the grounds. A small bloom should form already. Fill the water to the appropriate level. Quickly grab a long spoon or chopstick and stir the slurry, this aids in the complete extraction of the essential oils and flavor of the coffee beans.
- LET COFFEE STEEP
Assemble the filter/plunger and let coffee steep for 2-4 minutes (depending on size).
- SLOW STEEDY ACT I
Start pressing down in an even, controlled manner, always keeping the plunger rod absolutely straight. If it goes crooked, grounds will escape into the upper portion. Ready for some coffee!
- SLOW STEEDY ACT II
Hold onto the lid and pour the fresh coffee into your favorite cup. Be careful to keep filter assembly on bottom. Slow and steady wins the race. Enjoy a great cup of coffee.
The Drip Method is a quick, time tested easy method for making a good brewed coffee at home. It's a total immersion brewing process, which is the best way to make coffee. As always the keys to a good result are: the highest quality fresh roasted beans, ground just before brewing.
- GETTING STARTED
Grinding coffee is important. We can't emphasize this enough. How and when you do it is one of the keys to a great cup. We recommend a quality burr grinder, avoid the blade grinders! Blade grinders chop the beans which results in uneven particle size, which results in increased bitterness, inaccurate flavor and inconsistent results from cup to cup. The grind should be slightly less coarse than a press grind. Use a high quality grinder set to coarse. 1 round tablespoon per 'cup'—about 4 oz. Your water should be boiled before you grind the coffee. This ensures the freshest cup possible.
- POURING WATER
Pour the water slowly, saturating all of the grounds. A small bloom should form already. Fill the water to the appropriate level. Do not fill the container entirely, you'll notice a 'bloom' will develop, this is a normal thing—the result of CO2 off gassing from the coffee.
- FOUR MINUTE MILE
Don't overbrew. Four minutes of brewing will give you a great cup... After a minute or so, give the brewing coffee a stir with a chopstick. This will ensure optimum brewing.
- FILTER AND DRINK
Place filter on brewing container and pour into your favorite mug. Enjoy!
